Thanks for the tip on the flax + milk. I made banana bread subbing flax + water a while back, and the end result tasted ok, but was very dense. I wonder if milk would have made a difference. That's very cool that you are going to try banana oat pancakes...I'll look forward to your post if they turn out yummy!

Lol, I just wrote this long comment about possibly tweaking my favorite pancake recipe (spelt pancakes) from the King Arthur Flour Whole Grain Baking book into a banana-oat recipe.

Then I flipped the page and there is a recipe for banana-oat pancakes!

I'll give them a whirl and if they're awesome, I'll post the recipe here on the blog.

By the way, 1 tablespoon ground flax seed + 1/4 cup soy milk = substitutes for 1 egg. So anything you're baking with eggs, you can use that flax seed/soy milk formula to replace the eggs. The flax seed provides the egg's binding action and the soy milk provides the leavening action.

Hi, tried with the "fancy" oat flour, and mmm-mmm! These are my son's (almost 2 yrs old now) first cookies ever...he has multiple food allergies, including wheat and egg. I did replace the choco chips w/ raisins...he loves raisins and hasn't had choco yet. He and my husband both loved them. I left a few plain for myself as I don't care for raisins...they reminded me of some store bought iced oatmeal cookies I have had before (only better). I don't really bake so this is all new to me...was wondering if the ingredient amounts in this recipe could be altered slightly to make pancake and/or muffin batter, and include either blueberries or bananas. Any suggestions? Thanks very much for sharing this recipe. Really yummy!
